    yummy gluten-free cinnamon rolls

    List of Ingredients


    • 2Tbs Butter
    • 1/4C Turbinado sugar (or plain old white sugar)
    • 2/3C Goat milk (or cow), room temp
    • 1 packet of yeast
    • 1 egg, room temp
    • 1/4C coconut oil (or canola)
    • 1/2C Potato starch
    • 1C Arrowroot
    • 1/4tsp Baking Soda
    • 2 1/2tsp Xantham gum
    • 2tsp Baking powder
    • 1/2tsp fine sea salt (or kosher)
    • 1tsp Vanilla extract
    • 1/2tsp Almond extract (optional)
    • FILLING:
    • 2/3C brown sugar
    • 1 1/2tsp Cinnamon


    Instructions


    1. Preheat oven to 375
    2. Add yeast to milk. Wisk until smooth. Cover and let sit for 10-15 min
    3. Combine butter and sugar until smooth. Add milk/yeast mixture. Add remaining ingredients (except filling). mix until all lumps are removed. (the dough will be soft, don't worry)
    4. Place dough on wax paper covered in cinnamon sugar (or just sugar). Using rubber scraper, spread/flatten dough into about an 11x13 rectangle.
    5. Mix filling ingredients and spread onto dough, leaving about an inch around three edges.
    6. carefully roll the dough into a cylinder. Slice into about 8 pieces, and place in round baking dish.
    7. Bake for 20 minutes (dough may be refrigerated overnight before baking if you want less work in the morning).


    Final Comments


    The original recipe came with a glaze and had more sugar in it. But I think these ooey gooey rolls are plenty sweet.
