    This sauce goes with anything, and the variations are great, too!


    List of Ingredients


    • 3 Tbsp. hard margarine (or butter)
    • 1/2 cup finely chopped onion (optional)
    • 3 Tbsp. flour
    • 2 cups milk (or half-and-half cream)
    • 1/4 tsp. salt
    • 1/4 tsp. pepper
    • 1/4 tsp. ground nutmeg


    Instructions


    1. Melt the margarine in a small saucepan on medium heat. Add the onion and saute for 5 minutes until soft.
    2. Stir in the flour, making sure it's mixed in well. Cook and stir for 1 to 2 minutes or until bubbling and grainy.
    3. Gradually whisk in 1/4 cup of the milk until combined. Whisk in the remaining milk, salt and pepper, until the sauce is blended.
    4. Simmer, uncovered, on low for about 10 minutes, stirring occasionally, until the sauce is thickened. Stir in the nutmeg.
    5. VARIATIONS: Mornay Sauce-Add 3 Tbsp. Parmesan cheese, 3 Tbsp. grated cheddar cheese, and 1 egg yolk.
      Herb-Add 2 Tbsp. each of chopped fresh parsley and basil.


    Final Comments


    Yield: about 2 1/2 cups
