    My Own Personal Collection

    This is an incredible combination of ingredients with tasty results.


    List of Ingredients


    • 1 lb. shrimp
    • 1 lb. scallops
    • 2 Tbsp. butter
    • 1 lb. frozen spinach
    • 1-14 oz. can coconut milk
    • 1 1/2 Tbsp. Thai curry paste
    • 2 tsp. fresh lemon juice


    Instructions


    1. In a large pan or good sized pot, melt butter over medium heat.
    2. Add the shrimp and scallops and saute. Don't cook them, just coat them with the butter for about 1 minute.
    3. Add the spinach, coconut milk, and spices and stir until everything is well mixed.
    4. Reduce to low heat and cover the pot.
    5. Let it simmer for about 5 minutes or until the seafood is cooked (don't overcook).
    6. Serve in soup bowls. Can also be served over rice.


    Final Comments


    Yield:4-6 servings (water can be added to extend the servings, and I reccommend it!)
