Pear and Pecan Salad with Wheat Beer Vin

The mellow flavor of wheat beer requires the sharp contrast of citrus whether it's a wedge of lemon or a kick of raspberry. Balsamic vinegar does the job in this recipe, and the vinaigrette will keep for weeks in the refrigerator.

Ingredients: Wheat Beer Vinaigrette
3/4 cup wheat beer
2 garlic cloves, minced
1 tablespoon wildflower or medium-colored honey
1 tablespoon Dijon mustard
1/2 cup balsamic vinegar
2/3 cup olive oil
Ingredients
6 cups assorted salad greens
3 to 4 ripe pears, peeled, cored and sliced
6 ounces fresh goat cheese, crumbled
1/2 cup native or commercial pecans, toasted Recipe
Method Wheat Beer Vinaigrette: In a small saucepan, heat the wheat beer and boil until it has reduced to 1/4 cup, about 10 minutes. Remove the pan from the heat and whisk in the garlic, wildflower honey, mustard, balsamic vinegar and olive oil. Taste for seasoning and set aside.
Arrange the greens on 6 to 8 salad plates and arrange the pear slices on the greens. Crumble the goat cheese on the pears and then dress each salad with the vinaigrette. Sprinkle toasted pecans over each salad and serve. Serves 6 to 8.
