    Cod with Cream


    List of Ingredients


    • 800 grs (2 lbs) dry cod
    • 2 egg whites
    • 3/4 cup cream
    • 1 cup olive oil
    • salt and
    • 4 4" molds, buttered


    Instructions


    1. Prepare the cod as usual, that is, leave in
      water about 12 hours, changing water several times, and leave in fresh
      water overnight in frdge.
    2. Then put in a deep pot covered with fresh water
      and bring slowly to simmer. Simmer for about 15 minutes, let cool, de-bone
      and take off skin.

    3. Then process half of the cod with the egg whites, strain and put in a bowl over ice.
      Add cream and salt and pepper to taste.
    4. Cut the rest of the cod in very
      fine slices.Put cod cream in the molds and on top the cod slices in the
      shape of a flower.
    5. Cook, covered, in the oven for about 20 minutes, and serve hot.
