    Cake
    2 cup sugar
    1 1/2 cup oil
    4 eggs
    2 cup flour
    1/2 Tbs baking soda
    2 tsp baking powder
    1 tsp salt
    2 tsp cinnamon
    2 cup carrots coarsely grated
    1 small can crushed pineapple drained
    1 pkg diced pecans

    Icing
    1/2 cup butter
    1/2 lb cream cheese
    1 tsp vanilla
    1 lb confectioners sugar

    Recipe



    Cake
    1 Preheat oven to 350° F.
    2 Grease and flour 15 x 10-inch pan.
    3 In large bowl mix sugar and oil.
    4 Add eggs.
    5 In separate bowl combine flour, baking soda, baking powder, salt and cinnamon.
    6 Slowly add flour mixture to egg mixture.
    7 Stir in carrots, pineapples and pecans.
    8 Pour into prepared pan.
    9 Bake for 40 to 50 minutes or until wooden pick inserted in center comes out clean. Cool completely in pan on wire rack.

    Icing
    1 Combine butter, cream cheese and vanilla until creamy.
    2 Add sugar gradually.
