    Recipe Introduction


    This is a delightfully wonderful biscotti, full of flavor with hazelnuts, chocolate and the uniquely exotic flavoring of lavendar flowers. It is excellent served with a cup of coffee or a sweet dessert wine. recipe makes approximately 50-60 individual biscotti.

    List of Ingredients




    3 tblspn dried lavender flowers
    100 g. hazelnuts
    50 g. almond paste
    100 g. semi-sweet chocolate
    1/4 cup butter (1/2 stick)
    1 cup sugar
    1/2 cup honey
    1 egg
    2 tspn vanilla
    2 tspn baking powder

    Recipe



    Coarsely chop hazelnuts, almond paste and chocolate and set aside. Fine chop lavender flowers and set aside. For easier chopping of lavender, first using a rolling pin to flatten flowers 1 tablespoon at a time prior to chopping.

    Mix together the butter, sugar, honey and vanilla until it becomes light and fluffy. Blend in the egg and set aside.

    In another bowl, blend together the flour, baking powder and lavender flowers. Mix into the egg-sugar mixture. Add the chopped nuts, almond paste and chocolate bits, blending well.

    Divide and form the dough into six log-like rolls and place onto parchment paper on baking sheet. Flatten each roll with the palm of your hand or rolling pin until dough is approximately 1” thick. Place baking sheet in the middle of a 375? preheated oven for approximately 12-15 minutes (until browned). Remove and let cool.

    Cut cool biscotti rolls diagonally into approximately 1” thick slices and lay cut surfaces face up on parchment covered baking sheets and bake for an additional 10 minutes (until browned). Remove and let biscotti cool completely before serving. Store in airtight container or plastic bags.
