Mom made this most Sundays and it is filling and good. My kids now make it for their families.





List of Ingredients



• 6 eggs
  
• 4-5 potatoes, diced or sliced
  
• 1 large onion, sliced
  
• 3-4 tbsp. butter
  






Instructions



1. Melt butter in large skillet. Fry potatoes and onions until golden brown and ready to eat.
   
2. Scramble eggs and pour over potatoes. Cook until eggs are set.
   
3. Meat such as bacon bits, ham, sausage may be added if desired. Spray oil may be substituted for butter, but be careful of burning and sticking.
