    Spinach and Cheese Quiche

    List of Ingredients


    • 1 prepared 9" pie shell
    • 1 tablespoon butter
    • 1 package (10 oz) fresh baby spinach, washed
    • 1 cup half-and-half
    • 3 eggs
    • 1 cup (4 oz) shredded Swiss cheese
    • 1/2 cup (2 oz) Havarti or other white cheese, cubed


    Instructions


    1. Pierce sides and bottom of pie crust with fork. Bake 10 minutes.
    2. Melt butter in large skillet and add spinach. Cover, place on medium-high heat and steam until spinach is wilted, 3-4 minutes. Meanwhile, whisk cream and eggs.
    3. Layer half of the Swiss cheese, half the spinach, the Havarti cheese and the remaining spinach and Swiss cheese in the pie crust. Pour the egg mixture on top.
    4. Bake quiche until the filling is set, 40-50 minutes. Remove from the oven and cool for 5-8 minutes on wire rack before cutting.
