    Recipe Introduction


    OK, this looks like it's not too good for ya but it is only a side. I have done it with less oil and less salt. It's doable. I wouldn't cut the oil to less than a tablespoon and don't cut the salt to less than a couple teaspoons. This is our absolutely *favorite* side dish. We have it with grilled lemon chicken and corn on the cob! And, you HAVE to let it set to marinate or it's not as tasty. You can also vary the amount of garlic you use to suit your family's taste. Or you can dice or crush it instead of slicing. Can you tell it's not a set in stone recipe??


    List of Ingredients


    • 4 large tomatoes
    • 1/4 cup olive oil
    • 1 TABLESPOON salt (yep, that's correct)
    • 2 cloves garlic


    Instructions


    1. Dice tomatoes and put in a non-reactive bowl (not an aluminum one). Peel garlic cloves and slice thinly. Add to tomato. Pour oil over all and then pour salt on it. Mix thoroughly. Allow to set unrefrigerated for a couple hours or refrigerate over night.
