    Chocolate-Toffee Cookies

    2 1/2 cups flour
    3/4 tsp baking soda
    1/4 tsp salt
    1 cup (2 sticks) unsalted butter, softened
    1 cup packed light-brown sugar
    1/2 sugar
    1 egg
    2 tsp vanilla
    1 cup semisweet chocolate chips
    1 bag (8 ounces) chopped milk chocolate toffee chips (such as Hershey's Heath Bar baking pieces)

    Heat the oven to 375 F. Coat the baking sheets with nonstick cooking spray. Set aside. Stir together the flour, baking soda, and salt in a medium size bowl. Set aside. In a large bowl, beat together the butter and both the sugars until light and fluffy, about 3 minutes. Beat in the egg and the vanilla. On low speed, gradually add in the flour mixture. Beat for 2 minutes or until blended. Stir in the chocolate chips and toffee pieces. Drop the batter by tablespoonfuls onto the prepared baking sheets. Bake for 12 minutes or until golden. Cool the baking sheets on wire racks for 5 minutes. Transfer the cookies to wire racks to cool completely.
    Makes about 48 cookies.
