    Roasted Red Potatoes

    1 pound small red potatoes
    1 tablespoon olive or vegetable oil
    1/2 teaspoon salt
    1/8 teaspoon pepper
    2 tablespoons grated Parmesan cheese

    Recipe



    Cut the potatoes into 1/4 inch slicers; toss with oil. Place in a single layer in a greased 13-inch X 9-inch X 2-inch baking pan. Sprinkle with salt, pepper and Parmesan cheese. Cover tightly with foil. Bake at 350F for 40 minutes or until tender.
    Serves 4.
