    Cinnamon & Raisin Rice Pudding with Caramelized Apples and Pecans
    Makes 4 servings





    Ingredients
    1 package UNCLE BEN'S® Cinnamon & Raisins Rice Pudding
    1 large apple
    1 teaspoon lemon juice
    2/3 cup sugar
    3 tablespoons butter
    1/2 cup whole pecans
    1 tablespoon apple cider vinegar



    PREP TIME 5 minutes
    COOK TIME 45 minutes




    PREP: CLEAN: Wash hands. Core apple and slice in half, then slice each half into 4 to 6 slices. Place in bowl with lemon juice and enough water to cover. Set aside.

    COOK: Prepare pudding according to package directions. Keep warm. In medium saucepan, cook sugar over medium heat until melted, golden and caramelized. Add butter and stir. Drain apples. Carefully add apples and pecans to caramelized sugar. Cook until apples are tender. Remove apples and pecans from pan. Add apple cider vinegar and cook 1 minute or until most of vinegar evaporates.

    SERVE: Place individual servings of rice pudding in bowls. Top with apples and pecans. Drizzle generously with caramel sauce.

    CHILL: Refrigerate leftovers immediately.
