    Traditional roasted turkey for the holidays filled with a fruit and spice stuffing.

    List of Ingredients




    Serving Size Suggestion : 1/4 - 1/2 Lb. of bird weight per person

    1 turkey
    1/4 cup butter OR margarine - softened
    1/4 cup dried basil
    1/4 cup dried oregano
    3 Tbls. ground cinnamon
    3 Tbls. dried rosemary OR 1 sprig fresh rosemary
    2 Tbls. ground cumin
    1 tsp. salt
    1 tsp. black pepper
    2 med. apples - peeled, cored, diced
    2 sm. orange - peeled, diced
    1 stalk celery - diced
    1 bay leaf - crushed

    Recipe



    Spray bottom of roasting pan with cooking spray.
    -Remove turkey from bag, reserving the bag, and remove giblets, neck, and excess skin.
    -Pierce the breasts and thighs with a fork several times.
    -Rub butter over entire turkey; reserve remaining butter.
    -Place turkey in a greased roasting pan; insert a meat thermometer in the thickest part of a thigh; set aside turkey.
    -Combine basil, oregano, cinnamon, rosemary, cumin, salt, and pepper; set aside.
    -Toss together apples, orange, celery, bay leaf, and 1/4 cup of the prepared seasoning blend.
    -Loosely stuff the turkey cavity with the fruit mixture; place any remaining mixture under bird in the pan.
    -Tie turkey legs together with string and tuck wings under breast.
    -Sprinkle remaining prepared seasoning blend over entire turkey and rub into skin.
    -Create a loose "tent" over the turkey using aluminum foil.
    -Roast turkey in a 325 degree oven according weight:

    6-8 Lbs. 2 3/4 - 3 1/2 hours
    8-12 Lbs. 3 1/4 - 4 hours
    12-16 Lbs. 3 1/2 - 4 1/2 hours
    16-20 Lbs. 4 - 6 hours
    20-26 Lbs. 5 1/2 - 7 1/2 hours

    -Baste turkey with juices in pan every 30-45 minutes; if there's no juice in the pan, melt remaining butter and use that to baste.
    -Uncover turkey for the last hour and increase basting to every 15 minutes.
    -Before removing turkey from the oven, make sure the thermometer has reached 185 degrees.
    -Allow turkey to cool 15-20 minutes before carving.


    Holiday Spinach Dressing


    Prep. Time : 1:30
    Serves: 6-8

    1 loaf sourdough French bread - day old is best
    milk - to cover
    1 pkg. frozen spinach
    1 pkg. Jimmy Dean® sausage - mild OR hot
    1 sm. yellow onion - diced
    4 cloves garlic - crushed
    1 Tbls. butter
    1 cup shredded Monterey Jack cheese
    (2) 7oz. cans button OR sliced mushrooms - drained
    3 egg yolks

    -Cut off ends of bread and tear remaining loaf into pieces.
    -Put torn bread into a bowl pour over just enough milk to cover. Soak for 5 minutes.
    -Strain out milk, squeeze bread dry, and set aside.
    -Cook spinach per directions; cool and squeeze dry; set aside.
    -In a skillet, fry sausage,crumbling as you cook it. Drain off all grease and set aside.
    -Saute onion and garlic in butter until onion becomes translucent.
    -Add spinach and sausage to onions and garlic, mix well, and set aside to cool.
    -Combine bread and spinach mixture with cheese.
    -Add mushrooms and egg yolks.
    -Mix all ingredients together well and pour into a 12" X 9" X 4" casserole dish sprayed with cooking oil.
    -Bake covered in 350 degree oven for 35-45 minutes, or until heated through.

    NOTES: Serve as a side dish with holiday turkey. Do not put dressing into turkey as it will turn the turkey green.

    Heavenly Potatoes

    Serves : 10
    Prep. Time : 2:00

    6 med. potatoes - peeled, cubed, boiled until tender
    1 sm. onion - minced
    4 oz. cream cheese - softened, low-fat okay
    1/2 cup sour cream - low-fat okay
    1/2 cup grated cheddar cheese - low-fat okay
    2 tsp. salt
    1/4 tsp. garlic salt
    3 Tbls. butter OR margarine - cut into small pieces
    1/4 tsp. parsley flakes - for garnish
    1/4 tsp. paprika - for garnish

    -Beat together all ingredients, except for butter, parsley, and paprika and spoon into a greased 9" X 9" X 2" casserole dish; dot top with butter; sprinkle parsley and paprika over top.
    -Refrigerate for at least 1 hour, or overnight.
    -Bake in a 400 degree oven for 35 minutes, or until warm throughout.

    Notes : For a more classy presentation, after combining all of the ingredients, spoon the mixture into a pastry bag with a decorative tip and pipe 3" circular mounds onto a greased baking sheet; sprinkle parsley and paprika over top; refrigerate for 1 hour; bake in a 400 degree oven for 15 minutes.
