    Molten Chocolate Lava Cake

    Recipe Introduction


    The idea is that high heat and short cooking time allows only the outer edges to bake. This recipe makes 5, 1 cup portions. Use high quality chocolate and real butter!


    List of Ingredients


    • 2 sticks unsalted butter
    • 8 ounces bittersweet chocolate
    • 4 eggs
    • 4 egg yolks
    • 1/2 cup sugar
    • 4 tablespoons flour


    Instructions


    1. Preheat oven to 450.
    2. Butter and flour 5 ramekins or other molds.
    3. Melt butter and chocolated in a double boiler.
    4. Remove from heat and set aside to let cool slightly.
    5. Beat together eggs, yolks and sugar until mixture thickens into a "runny pudding" consistency.
    6. Beat in chocolate mixture until blended in.
    7. Add flour and beat until blended.
    8. Pour into ramekins/molds.
    9. Place on a thing cookie sheet and bake for 6-7 minutes.
    10. The top-centers will be jiggly.
    11. Turn ramekin/molds upside down on a serving plate
    12. Wait 10 seconds and tap out onto plates.
    13. Sprinkle with powdered sugar or top with ice cream.
