    Recipe Introduction


    This is really yummy and can be served warm or cold.


    List of Ingredients


    • 3 cups rhubarb, diced
    • 1 1/2 cup granulated sugar
    • 1 tsp vanilla
    • 2 tbsp cornstarch dissolved in 1/4 cup cold water
    • 1 1/2 cups sifted flour
    • 1/2 tsp baking soda
    • 1 cup brown sugar
    • 1 cup butter or margarine
    • 1 1/2 cups oatmeal
    • 1/2 cup walnuts (optional)


    Instructions


    1. In a large pan, mix rhubarb, sugar and vanilla.
    2. Add cornstarch and cook over low heat until rhubarb is tender, stirring contstantly until thickened.
    3. Remove from heat and set aside to cool.
    4. In a medium bowl, mix dry ingredients, cut in butter. Add nuts and combine well.
    5. Pat 3/4 of the crumb mixture in 9 x 13 pan. Spread the cooled rhubarb on top.
    6. Sprinkle the remaining crumbs on top.
    7. Bake at 350F for 40 minutes.


    Final Comments


    For variety, subtitute 1 cup of strawberries for one of the cups of rhubarb.(add red food colouring to make the filling brighter)
