    Twice Baked Potatoes

    Makes 8 servings (75 calories each when using skim milk)


    List of Ingredients


    • 4 medium potatoes
    • 1 cup low fat cottage cheese
    • 1/2 cup skim milk or buttermilk
    • 1 tblsp minced onion
    • 1/2 tsp salt
    • sprinkle of paprika
    • sprinkle of pepper
    • parsley for garnish


    Instructions


    1. Scrub potatoes under cold water until clean, prick each potato with a fork.
    2. Bake at 400F for 45 minutes or until tender.
    3. Cut hot potatoes in half lengthwise.
    4. Scoop out and mash, mix together with the cottage cheese, milk and onion.
    5. Beat until fluffy and put back into the potatoes.
    6. Sprinkle with paprika, pepper and parsley.
    7. Bake 10 minutes more until golden.
