    Recipe Introduction


    The batter does not hide the taste of the shrimp, so it is best with good, fresh shrimp. I dehead, devein, and remove the entire shell and tail. I do 1 pound per person, weighed with heads on and I like 20 - 24 size.


    List of Ingredients


    • 1 cup flour
    • 1 tbls baking powder
    • salt & pepper
    • 2 tbls cooking oil
    • Ice water
    • 3 - 4 Ice cubes
    • 2 tubes saltine crackers


    Instructions


    1. Crush saltines into very fine powder and put into bowl
    2. Combine flour, baking powder, salt & pepper in separate bowl
    3. Add ice water to flour mixture to make a thick paste
    4. Add cooking oil to flour paste
    5. Keep ice cubes in batter to keep cold
    6. Coat cleaned shrimp with flour mixture then coat with cracker crumbs
    7. Then drop into deep fryer with oil heated up to 450 - 500 degrees
