Recipe Introduction
The batter does not hide the taste of the shrimp, so it is best with good, fresh shrimp. I dehead, devein, and remove the entire shell and tail. I do 1 pound per person, weighed with heads on and I like 20 - 24 size.
List of Ingredients
- 1 cup flour
- 1 tbls baking powder
- salt & pepper
- 2 tbls cooking oil
- Ice water
- 3 - 4 Ice cubes
- 2 tubes saltine crackers
Instructions
- Crush saltines into very fine powder and put into bowl
- Combine flour, baking powder, salt & pepper in separate bowl
- Add ice water to flour mixture to make a thick paste
- Add cooking oil to flour paste
- Keep ice cubes in batter to keep cold
- Coat cleaned shrimp with flour mixture then coat with cracker crumbs
- Then drop into deep fryer with oil heated up to 450 - 500 degrees
