    1 1/2 cups all purpose flour
    1-4 oz pkg of jello instant vanilla pudding mix
    1/4 cup sugar twin or splenda
    1 tsp baking soda
    1 1/2 tsps cinnamon
    1/2 tsp baking powder
    1 cup shredded unpeeled zucchini
    1/2 cup + 1 tbl raisins
    2 eggs or equivalent in egg substitute
    2 tbls vegetable oil
    1 tsp vanilla
    3/4 cup unsweetened applesauce

    Recipe



    Preheat oven to 350 degrees.
    Spray 9x5 pan with Pam.
    In a medium bowl, combine first 6 ingredients, add zucchini and '
    raisins and mix well to combine
    in a small bowl, beat eggs with forke and add oil, vanilla and
    applesauce
    then stir this mixture into flour mixture. Mixing until just
    moistened.
    Pour into prepared pan and bake for 50 minutes or until toothpick
    comes out clean.
    cool in pan for 5 minutes on wire rack, remove from pan and let cool.
    8 thick or 16 thin slices
