    List of Ingredients

    1 1/2 c. All purpose cornmeal (i prefer yellow but white is fine)
    1/2 c. all purpose flour
    2 tsp baking powder
    1 tsp sugar (opt) (I usually add 2 tsp)
    1 tsp salt
    1/2 tsp baking soda
    1/4 c melted shortening or bacon grease (i prefer bacon grease)
    1 1/2 c buttermilk (i put a tbsp of vinegar in measuring cup and add milk to 1 1/2 c and let it sit while i am measuring the other ingredients)
    2 eggs

    Optional add ins:
    1 tbsp chopped jalapeno in jar
    1/4 c shredded cheddar cheese


    Preheat oven to 450*.
    Put a tbsp of shortening grease in 9 iron skillet or baking pan. Put in oven to melt. Swirl to cover bottom and sides.
    Mix dry ingreds. Add wet until just mixed. Pour into pan and bake about 25 min until done in middle.
