Hazel's Cookin' with Country Stars Hot Dish Cookbook

    Recipe Introduction

    Yummy and rich!

    List of Ingredients

    1 1/2 c. sugar
    2 tb. flour
    1 1/2 c. evaporated milk
    3 eggs
    1 stk butter
    1 tsp. vanilla
    3-4 bananas (I used 4)
3/4 box vanilla wafers (I used the whole box, minus 2 I ate while preparing!)

    Recipe

Mix sugar and flour in pan. Separate eggs. I put the whites in the frig until ready to prepare them. Stir yolks with a fork until blended. Add milk in same cup as egg yolks. Slowly stir egg/milk mixture into sugar/flour mixture until well blended. Put saucepan on low heat and allow to cook until a custard forms and thickens. Be careful to watch, as I tried to do too many other things while making mine the first time and scorched it and had to throw it out and start over! Remove from heat when thickened. Add butter and stir until melted. Cool. Add vanilla flavoring. While cooling, take a quart size dish and layer cookies and bananas to make 3 layers. Pour cool custard over layers (it will trickle through layers). Add a couple sprinkles of cream of tartar to egg whites. Using electric mixer, beat until frothy. Continue beating and add 1/2 c. sugar and 1/2 tsp. vanilla. Spread on top of custard. Bake at 375* until slightly browned, 10-15 min. Makes 6-8 servings.
