    Recipe Introduction


    This is very easy and very quick. My family really liked it.

    List of Ingredients




    3 c. chunky style spaghetti sauce
    1 med. zucchini, shredded (I've added 2 and it came out good)
    6 uncooked lasagna noodles
    1 c. ricotta or small curd cottage cheese
    1/4 c. grated parmesan cheese
    1 tb. dried oregano
    2 c. (8 oz) mozzarella cheese, shredded
    sprinkle of garlic powder and italian seasoning (this was not in the recipe, just something I add)

    Shred zucchini and mix with spaghetti sauce. Spread one cup of mixture in 11x7 baking dish (I spray the dish with cooking spray). Top with 3 uncooked noodles. Mix ricotta/cottage cheese, parmesan and oregano. Spread over noodles in dish. Spread with 1 c. of the sauce mixture. Top with remaining noodles, sauce mixture and mozzarella. Lightly sprinkle garlic powder and italian seasoning over top. Bake uncovered at 350* until hot and bubbly (about 45 min.). Let stand at least 15 min. before cutting. Makes 8 servings.

    **I have also added a few chopped mushrooms with the sauce mixture.
