    The full name of this is "Spaghetti with Asparagus, Smoked Mozzarella and Prosciutto". It is easy and tasty.

    List of Ingredients




    2 lb. fresh asparagus, trimmed
    3/4 lb. spaghetti (I used a locally made pasta)
    4 tb. olive oil
    4 garlic cloves, minced
    salt and freshly ground black pepper
    6 oz. thinly sliced prosciutto, cut crosswise into strips (prosciutto is an Italian ham...I'm sure if you couldn't find it...you could use a good cured ham)
    6 oz. smoked mozzarella cheese, diced (about 1 cup)(when I made this, I could not find smoked mozzarella, so I substituted 4 oz. of regular mozzarella and 2 oz. of smoked gyuere cheese)
    6 tb. thinly sliced fresh basil leaves (I loved fresh basil in dishes, but the day I made this, the store was out...so I used a good teaspoon of dried basil instead)

    Cook the asparagus in a large pot of boiling salted water until crisp tender, about 2-3 min. With a spider or slotted spoon, remove asparagus from boiling water to a bowl of ice water to cool and stop the cooking. When cool, strain, cut asparagus into 1" pieces and set aside. Return water in pot to a boil, adding additional water, if necessary. Add the pasta and cook until al dente, tender but still firm to the bite, about 8 min. Drain pasta, reserving 1 cup of cooking liquid. Heat oil in heavy large skillet over med heat. Add the garlic and saute until fragrant, about 20 min. Add asparagus to the skillet. Season with salt and pepper, to taste. Add the pasta, and if needed, some of the reserved cooking liquid (I think I used 1/2 cup or so). Toss to coat. Add the prosciutto, mozzarella and basil and toss to combine. Turn off the heat. Season w/ salt and pepper to taste, and serve.
