    Very good.

    List of Ingredients

    1 lg. fat hen, skinned
    3 garlic cloves, crushed
    salt and pepper

    3 c. SR flour
    1 tsp salt
    1 c. water
    1 egg, beaten
    6-8 c. chicken broth
    1/2 c. cream
    1 tb. cornstarch (optional)


    In a large pot, boil hen w/ garlic, salt and pepper in water for 2 hrs. Add additional water as needed. Drain hen, reserving broth. Cut into pieces and discard bones.

    For dumplings, sift flour and salt. Add water. Stir in egg. Knead thoroughly and roll out onto floured surface. Cut dough into strips (I use a pizza cutter). Bring broth to boil and drop dough into the broth. Cover and simmer 10 min. Add cream and chicken and simmer 5-10 min. Add 1 tb. of cornstarch to thicken (she didn't note, but I assumed cornstarch should be mixed with a little cold liquid before adding). I actually also added the flour that was left on the rolling board to the broth to thicken additionally.

    6-8 servings
