    This was really easy and very good. According to the cookbook, "A cataplana is a copper Portuguese cooking pan". But a dutch oven is substituted. I also added a potato to make recipe a little bigger...and it worked out fine.

    List of Ingredients




    2 tb. olive oil
    1 1/2 c. favorite salsa
    2 med potatoes, peeled and thinly sliced
    2 whole, skinless, boneless chicken breasts, halved
    1 med. onion, thinly sliced
    1 tsp dried oregano
    salt and black pepper to taste

    Recipe



    Preheat oven to 350*f. Place oil in bottom of dutch oven. Ad half of salsa. Top with layer of sliced potatoes, chicken breasts and onions. top with remaining salsa and sprinkle the oregano over it. Season with salt and pepper. Cover and bake for 1 1/2 hrs.
