    3/4 pound dried apricots
    3 cups water
    1/2 cup sugar
    3 Tablespoons quick tapioca
    1/8 teaspoon salt

    Recipe



    Wash apricots, soak 1 hour. Cook in same water until tender. Drain. Cook tapioca in juice from apricots, adding enough water to make make 2 cups of liquid. Cook until clear in double boiler, stirring frequently. Add sugar. cool. Force apricots through a sieve. Fold pulp (about 1 cup) into tapioca mixture. Chill and serve with whipped creme.
