Hummus

1 (16-oz.) can chickpeas, drained, rinsed and drained again
3 cloves garlic, minced
1/2 cup fresh lemon juice (3 lemons)
1 cup tahini (sesame paste)
1 tsp. salt
1 cup cold water
olive oil
paprika
In food processor combine chickpeas, garlic, lemon juice, tahini and salt. With processor on, slowly pour in the water. Turn off machine and scrape down the sides of the work bowl. Add a tablespoon or so more of water if the hummus is too thick.
Pour into a serving dish. Cover and chill until ready to serve. Just before serving drizzle a little olive oil on top (don't mix) and sprinkle on some paprika. Serve with warm pita bread triangles.
