    Blueberry Pie with Frozen Berries

    Wish I could remember where this one came from cuz it's wonderful! And because it uses frozen fruit, you're not limited to certain times of the year when you can prepare it. Worth the effort (though, frankly, it really doesn't take a whole lot!)


    2 pastry crusts
    20 oz. frozen blueberries
    3 Tbsp. quick-cooking tapioca
    1-3/4 cups sugar
    1/8 tsp. salt
    2 Tbsp. melted butter

    Preheat oven to 450º F. Defrost fruit until it separates easily. Mix blueberries, tapioca, sugar, salt and butter together and let stand for 15 minutes before adding to pastry-lined pie dish. Cover filling with a pricked top or a lattice top pastry and bake for 10 minutes at 450º F. Reduce the heat to 350º F. and bake about 45 minutes or until golden brown. May use frozen cherries, raspberries or other berries in place of blueberries.
