    Baked Rice Custard Pudding

    This is very similar to a recipe that I can remember my grandmother preparing when I was just a wee thing (some time back when God was a boy!) The smell, the taste, the texture--they all carry me back to more innocent, more carefree times.


    2 cups milk
    3 eggs, beaten
    3/4 cup sugar
    1/2 tsp. salt
    1 cup cooked rice
    1/4 cup raisins
    1 tsp. vanilla extract
    ground nutmeg

    Scald milk. Combine beaten eggs, sugar and salt in a 1-1/2-quart casserole. Gradually stir in scalded milk. Add cooked rice, raisins and vanilla. Sprinkle with nutmeg and place in oven. Bake at 325º F. until set--about 50 to 60 minutes.

    Makes 6 servings.
