    Italian Sausages and Peppers

    Even better than what you'll find at the food trucks at the State Fair--since YOU get to control the amount of fat in the recipe.


    1-1/2 lbs. hot or sweet Italian sausage links
    1/4 cup water
    2 large sweet peppers cut into strips
    2 large onions, sliced
    1/2 tsp. salt
    1/2 tsp. dried oregano


    In a 12-inch skillet over medium heat, heat the Italian sausage links with water to boiling. Cover and cook 5 minutes. Remove cover; continue cooking, turning sausages frequently, until water evaporates and sausage links are well browned, about 20 minutes. Remove sausages to paper towels to drain. Pour off all but about 3 tablespoons fat from skillet; add peppers, onions, salt and oregano; over medium heat, cook, stirring frequently, until vegetables are
    tender.
    Add cooked sausage links to vegetables; heat through and arrange on warm platter.

    Makes 6 servings.
