Mexican Delight
Mom got this recipe from a now long-closed restaurant in my hometown: Spencer, Massachusetts. It's one of those dishes that--every time I prepare it--reminds me of my very happy childhood. One of my very own comfort foods.
1 lb. ground beef
1 bag wide noodles
1 green pepper, finely chopped
1 medium onion, finely chopped
1 can whole kernel corn with liquid
1 (6-oz.) can tomato paste
Cook ground beef, green pepper, onions together until meat is browned and vegetables are soft. Add corn with liquid and tomato paste. Simmer for 15 minutes.
Boil noodles. Drain. Mix together. Combine all in baking dish and place in a 300º F. oven for 20 minutes.
