    Lemon Mustard Chicken

    I can't remember where this one originally came from (so what else is new?) but I've tweaked it so much that I feel as though it's really my own, anyway. If you love mustard and garlic, you're going to enjoy this one.


    MUSTARD LEMON CHICKEN


    1 (4 to 6-lb.) roasting chicken
    1/4 cup Dijon mustard
    2 Tbsp. lemon juice (juice of one lemon)
    1 Tbsp. olive oil
    1 tsp. (or more!) minced garlic
    salt and freshly ground black pepper to taste


    Mix mustard, lemon juice, olive oil and garlic in a small bowl. Rub chicken, inside and out, with salt. Set chicken in a greased baking dish/roaster pan. Brush chicken with mustard/lemon juice/olive oil/garlic mixture. Sprinkle with salt and pepper.
    Preheat oven to 450º F. Place chicken in oven and roast for 30 minutes. Baste with mustard mixture.
    Reduce oven temperature to 350º F. and continue roasting until done, basting every 10 to 15 minutes.
    I usually cook this for a total of 75 to 90 minutes.


    Serves 4.
