    Know Gud Rice

    One of the best rice recipes that I have EVER encountered. I cannot recommend it highly enough. Thanks to Jo Anne in Spokane (doesn't that have a lovely ring to it?) for this amazing recipe (Gail's Recipe Swap on epicurious.com) although she says that it didn't originate with her. Still, since she's the one who posted it, she deserves at least PART of the credit.


    1 cup raw rice
    1 medium onion, finely chopped
    1 medium carrot, finely chopped
    1 medium red bell pepper, finely chopped
    1 large stalk of celery, finely chopped
    1 Tbsp. Worcestershire sauce
    1 Tbsp. A-1 steak sauce
    1/2 tsp. freshly ground white pepper
    1/4 tsp. garlic salt
    1 Tbsp. butter, melted
    2-1/2 cups chicken or turkey stock

    Mix rice thoroughly with all ingredients except the stock and put in a heavy ovenproof casserole (cast iron skillet works well). Cover mixture with stock and cover tightly with lid or aluminum foil.
    Place in a 350º F. oven and cook for 1 hour and 20 minutes or until all liquid is absorbed.
    Serve immediately.

    Serves 4.
