    Yang Chow Fried Rice

    A show-stopping dish if there ever was one! This one'll make you turn your nose up at any "house" fried rice recipe that you ever come across for the rest of your life. They just can't measure up to this one.


    1 cup raw rice, boiled and dried for about 1 hour
    1 lb. boneless skinless chicken breasts cut up into chunks
    1 egg
    1/4 bunch scallions, chopped
    1 onion, chopped coarsely
    1 bag bean sprouts, cleaned
    1 small can water chestnuts, sliced
    1/4 lb. pea pods, strings removed
    light soy sauce
    dark soy sauce
    oyster sauce


    Sauté onions and cut up chicken in peanut oil in wok until onions are translucent and chicken is par cooked. Set aside.
    Heat wok and put in 2 Tbsp. peanut oil. Add rice and stir while adding light (thin) soy sauce. Mix until rise loses its shininess. Add egg and blend thoroughly. Add onions and chicken. Mix thoroughly. Add dark soy for color and mix. Add bean sprouts. Mix. Add water chestnuts. Mix. Add pea pods. Mix. Add oyster sauce to taste. Mix. Add scallions. Turn off heat. Mix thoroughly.
