Chicken Fried Rice

List of Ingredients
- 1 cup - Chicken, diced and cooked
- 1 Tbsp - soy sauce (add more as needed)
- 1 cup - long grain rice, uncooked
- 1/3 cup - salad oil
- 2 1/2 cups chicken broth
- 2 1/2 cups - onion, coarsely chopped
- 1/4 cup - green pepper, finely chopped
- 1/4 cup - celery, thinly sliced
- 2 eggs - slightly beaten
- Optional - peanuts
Instructions
- Combine chicken, soy sauce and let stand for 15 minutes.
- Cook rice in hot oil, in skillet, over medium heat until golden brown.
- Reduce heat; add chicken with soy sauce and broth.
- Simmer covered, for 20-25 minutes, until rice is tender.
- Remove cover for the last few minutes.
- Stir in onion, green pepper and celery.
- Cook, uncovered, over medium heat until liquid is absorbed.
- Push rice mixture to the side of the skillet and add eggs.
- Cook eggs until almost set, and then blend into rice.
- Add peanuts.
