    List of Ingredients


    • 1 cup self rising cornmeal
    • 1 cup self rising flour
    • 1 egg
    • 1 cup buttermilk
    • oil


    Instructions


    1. Preheat oven to 425 degrees. Heat iron skillet on stove top with a dab of oil (enough to swirl and coat the bottom and sides of skillet).


    2. Mix in bowl flour, corn meal and egg.


    3. Add buttermilk so that the batter is about like pancake batter.


    4. Once skillet is hot, take a good pinch of corn meal and scatter on bottom of hot skillet. If it sizzles, it is ready.


    5. Pour cornmeal batter in skillet and cook for about 20-25 minutes or until top is starting to brown.
