    Mrs. Bettys Cat Head Biscuits

    List of Ingredients


    • 2 cups self rising flour
    • 2 Tablespoon shortening
    • 2 Tablespoon sour cream
    • 1 cup buttermilk
    • butter or bacon drippings (optional)


    Instructions


    1. Put in flour and shortening. Use fingers to break up shortening into flour until it is fine.

    2. Add sour cream and add buttermilk and mix well.

    3. Separate your dough in bowl in half, then half again and if you want small biscuits, half again.

    4. Grease with shortening on 8" cast iron skillet.

    5. Grease your hands with shortening and then dust them with flour.

    6. Take each portion of dough and roll it and make it more flat than round.

    7. If they are round and you mash them down, they may not rise properly.

    8. You can put butter on the tops or bacon drippings, both optional.

    9. Cook for 15 minutes at 450 degrees or until brown on middle rack.



    Final Comments


    Keep an eye on the bottoms and don't let them get too brown. Depending on you oven, you may have to adjust your temp or even rotate for even cooking.
