Sweet Potato Casserole

List of Ingredients
- 6 medium sweet potatoes (3 lbs)
- 1 cup white sugar
- 1/2 cup milk
- 1/3 cup plus 2 tablespoons butter (melted & divided0
- 2 large eggs
- 1 teaspoon vanilla
- 1/2 teaspoon salt
- 1/2 cup light brown sugar
- 3 tablespoons flour
- 1/2 chopped walnuts or pecans
- 14 large marshmellows, cut in half crosswise
Instructions
- Pierce potatoes with fork. Cook on high in microwave until tender, turing once, about 8 minutes per side.
- Cut open to cool. Spoon potato meat into bowl, mash until smooth. Measure out 3 cups.
- Preheat oven to 350 degrees.
- Coat 11 x 7 baking dish with spray. Set aside.
- Combine mashed sweet potoates, white sugar, milk, 1/3 cup butter, eggs, vanilla adn salt in medium bowl.
- Stir to mix well. Spoon in prepared dish.
- Combine brown sugar and flour in small bowl. Stir to mix well.
- Sprinkle over potatoe mixture. Sprinkle with nuts.
- Drizzle with remining two tablespoons butter.
- Bake 20 minutes.
- Remove from oven and top with marshmellows.
- Bake 10 minutes more until light brown.
