    Banana Nut Bread 2

    List of Ingredients


    • 3 cups all purpose flour
    • 2 cups sugar
    • 2 teaspoon baking soda
    • 1 teaspoon baking powder
    • 3 teaspoon cinnamon
    • 1/2 teaspoon nutmeg
    • 2 teaspoons cloves
    • 1 teaspoon salt
    • 2 cups shredded apple
    • 1/2 cup oil
    • 1 cup butter
    • 1 1/2 teaspoon vanilla
    • 4 eggs (separated)
    • 2 cups raisins
    • 1 cup buttermilk
    • 2 cups chopped pecans
    • 1 cup chopped dates (optional)
    • 2 cups mashed bananas
    • 1 cup apple juice


    Instructions


    1. Preheat oven to 325 degrees.


    2. Mix flour, cinnamon, salt, baking powder and nutmeg.


    3. Separate eggs, set aside.


    4. Stir baking soda into the buttermilk.


    5. Cream butter and sugar, add egg yolks and vanilla, beating well.


    6. Add flour mix alternately with mashed bananas.


    7. Stir in the buttermilk mixture.


    8. Add pecans, raisins, dates (coat with flour to keep from sticking) and apples.


    9. Beat egg whites until fluffly, fold into mixture.


    10. Pour into two loaf pans that have been greased and floured.


    11. Bake at 325 degrees for one hour or until knife comes out clean.


    12. If mixture is too dry, add buttermilk in small amounts.


    13. After cakes are cooled, pour apple juice over the top.
