    Salmon Patties

    List of Ingredients


    • 1 can (14 3/4 oz.) salmon, drained thoroughly
    • 1/4 cup onion, finely chopped
    • 1/4 cup cornmeal
    • 1/4 cup flour
    • 1 egg
    • 3 tbls. mayonnaise
    • 1 tsp. salt
    • 1/2 tsp. pepper
    • oil for frying


    Instructions


    1. Place drained salmon in mixing bowl and flake with a fork.


    2. Add remaining ingredients and stir until well blended.


    3. Shape into patties and refrigerate for approx. 30 minutes (this step just ensures they hold together a little better for frying).


    4. Heat oil in skillet (enough to come up the sides of the skillet about a half inch).


    5. Once oil is hot, fry until browned on each side.



    Final Comments


    Half a cup of breadcrumbs can be substituted for the cornmeal and flour and a teaspoon of Old Bay seasoning or seasoned salt can be substituted for the salt & pepper.
