    Honey Butter Pork Tenderloin

    4 Tablespoons butter

    2 Tablespoons honey

    1 & 1/2 lbs pork tenderloin, trimmed

    1/2 teaspoon cajun seasoning

    1/2 teaspoon black pepper

    3/4 cup water

    Preheat oven to 375%.

    In an large skillet ( I use a cast iron skillet w/ the raised ridges in bottom) but use what you have as long as it is oven-proof.

    Heat butter and honey over medium heat until melted. Sprinkle tenderloin with cajun seasoning and black pepper. Brown each side for 5 minutes in the honey butter. Lower heat if honey begins to burn.

    After all sides are browned, place skillet w/ the tenderloin in the oven and roast for 15-20 minutes, depending on how you like your roast, pink inside or more done.Remove skillet from oven and transfer the pork to a plate.

    Cover with foil. Add the water to the skillet and stir over medium heat. Simmer for about 5-7 minutes, until sauce is reduced slightly. Slice tenderloin on the diagonal and drizzle sauce over top to serve.

    NOTE: May need to cook longer in oven depending on size and thickness of the pork tenderloin.

    Do not be alarmed if sauce is really dark. I found this on line and my family loves it.

    The grandchildren loves the meat in a roll. This is really good and takes NO TIME to fix for a quick supper!
