    Mississippi Delta Duck

    List of Ingredients


    • 4 duck breasts
    • 8 slices of bacon
    • 1 onion (sliced and separted into rings)
    • 1 lemon
    • pepper to taste
    • 1 cup soy sauce
    • 1/2 cup worchestershire
    • lemon pepper
    • salt


    Instructions


    1. Fillet meat from bone, making 8 duck breast halves.


    2. Wrap each half with a slice of bacon; secure with a toothpick.


    3. Layer the bottom of a covered container with 1/2 of the onion rings.


    4. Place duck breast on top. Squeeze lemon over duck, season with pepper.


    5. Top with remaining onion rings.


    6. Marinate for 6 hours, turn duck after 3 hours.


    7. Cook in a water smoker with the top on for 20 minutes, turn and cook for 25 additional minutes.


    8. Add salt to taste when cooked.
