    Reuben Croquettes

    List of Ingredients


    • 1/2 cup Uncle Ben's Converted Rice
    • 1 lb can sauerkraut
    • 1 -12 oz can corned beef
    • 1/4 cup onion (chopped)
    • 3 eggs
    • 1 cup shredded swiss cheese
    • 1 teaspoon salt
    • 1/4 teaspoon pepper
    • 2 tablespoons water
    • 1 1/2 cup find dry bread crumbs
    • 1 cup mayo
    • 1/3 cup milk
    • 1/4 cup prepared mustard
    • 4 teaspoons lemon juice
    • oil for frying


    Instructions


    1. Cook rice according to package directions for HALF THE BASIC RECIPE.

    2. Drain sauerkraut very well, pressing out as much liquid as possible.

    3. Chop sauerkraut corn beef very fine.

    4. Add onion, 2 eggs, cooked rice, cheese, salt and pepper. Mix well.

    5. Shape into 18 croquettes, using 1/4 cup mixture for each.

    6. Combine remaining egg and water; beat slightly.

    7. Roll each in croquette in crumbs, then egg mixture and again in crumbs.

    8. Let dry 10 minutes.

    9. Fry crochettes in hot shallow oil, 5-7 minutes, turing once OR bakc in 450 degree oven for 10 minutes; turn and bake 10 minutes longer.
