Mulligatawny Soup

List of Ingredients
- 1 cup diced onion
- 2 diced carrots
- 4 diced celery
- 1/2 cup butter
- 3 tablespoons flour
- 4 tablespoon curry powder
- 8 cups chicken broth
- 2 bay leaves
- 1/2 cup apples
- 1 cup boiled or instant rice
- 1 cup cooked chicken
- 2 teaspoons salt
- 1/2 teaspoon pepper
- 1/2 teaspoon thyme
- 1 teaspoon grated lemon rind (optional)
- 1 cup half and half
Instructions
- Saute lightly onions, carrots, celery, and butter.
- Add flour and curry powder and cook 3 minutes.
- Add chicken broth and bay leaves.
- Simmer for 15 minutes.
- Add apples, rice, chicken, salt pepper, thyme and lemon rind.
- Simmer for 15 minutes.
- Immediately before serving, stir in half and half.
