    Mulligatawny Soup

    List of Ingredients


    • 1 cup diced onion
    • 2 diced carrots
    • 4 diced celery
    • 1/2 cup butter
    • 3 tablespoons flour
    • 4 tablespoon curry powder
    • 8 cups chicken broth
    • 2 bay leaves
    • 1/2 cup apples
    • 1 cup boiled or instant rice
    • 1 cup cooked chicken
    • 2 teaspoons salt
    • 1/2 teaspoon pepper
    • 1/2 teaspoon thyme
    • 1 teaspoon grated lemon rind (optional)
    • 1 cup half and half


    Instructions


    1. Saute lightly onions, carrots, celery, and butter.


    2. Add flour and curry powder and cook 3 minutes.


    3. Add chicken broth and bay leaves.


    4. Simmer for 15 minutes.


    5. Add apples, rice, chicken, salt pepper, thyme and lemon rind.


    6. Simmer for 15 minutes.


    7. Immediately before serving, stir in half and half.
