    Cheddar Bacon Potato Packets

    List of Ingredients


    • 4 medium potatoes, cut into 1-inch cubes
    • 4 tbsp. butter
    • 2 cups shredded cheddar cheese
    • 1 cup cooked & crumbled bacon
    • 2 green onions, sliced
    • salt & pepper to taste


    Instructions


    1. Preheat grill to medium heat (make sure grates are clean).


    2. Place cubed potatoes on each of the 4 aluminum foil squares.


    3. Add 1 tbsp. butter to each pile of potatoes.


    4. Sprinkle with salt & pepper, to taste.


    5. Cover potatoes with about 1/2 cup shredded cheese and 1/4 cup bacon pieces.


    6. Wrap foil securely around potatoes.


    7. Pierce foil with a knife several times to vent steam while cooking.


    8. Place on preheated grill.Cover and cook over medium heat for about 45-60 minutes until potatoes are tender.

      Once potatoes are finished, sprinkle with sliced green onions.



    Final Comments


    These can be made in the oven as well. Place on a baking sheet in a 375F degree oven for about 45 minutes (until potatoes are fork tender).
