    Lemon Marinated Chuck Roast


    List of Ingredients


    • 4 pound chuck roast
    • 1 teaspoon grated lemon peel
    • 1/2 cup lemon juice
    • 1/3 cup cooking oil
    • 2 Tablespoons sliced green onion
    • 4 teaspoons sugar
    • 1 1/2 teaspoons salt
    • 1 teaspoon Worchestershire sauce
    • 1 teaspoon prepared yellow mustard
    • 1/8 teaspoon black pepper


    Instructions


    1. Score fat edges of roast. Place meat in a shallow baking dish. Combine lemon peel and juice, cooking oil, green onion, sugar, salt, Worchestershire sauce, mustard and pepper. Pour over roast. Cover and let stand 3 hours at room temperature or overnight in the refrigerator. Remove roast reserving marinade.Grill over medium-hot coals 17-20 minutes. Turn and cook17-20 more minutes for medium-rare.
