    Chicken Teriyaki w/Cashew Pineapple Rice

    List of Ingredients


    • Marinade:
    • 1 cup teriyaki sauce
    • 3/4 cup pineapple juice
    • 1/2 cup brown sugar
    • 1/2 cup vinegar
    • 1 tsp. garlic powder
    • 1/4 cup worcestershire sauce
    • 1/2 cup italian salad dressing
    • 1 1/2 lb. boneless chicken breast
    • 1 small can crushed pineapple - drained
    • 3/4 cup cashew pieces
    • 4 cups rice


    Instructions


    1. Mix all "marinade" ingredients and bring to a boil. Cool and divide in half.
    2. Use half to marinade 1 1/2 pounds of boneless chicken breasts overnight. Refrigerate the other half.
    3. Prepare rice for 4 people as directed on box.
    4. Remove chicken from marinade and discard remaining marinade. Grill or broil chicken while rice is cooking.
    5. After rice is cooked, stir in crushed pineapples (drained), and about 3/4 cup of cashew pieces.
    6. Reheat other half of marinade(not the one that had the chicken in it).
    7. Serve cooked chicken over rice with hot marinade poured over the top.
