Chicken Teriyaki w/Cashew Pineapple Rice

- Marinade:
- 1 cup teriyaki sauce
- 3/4 cup pineapple juice
- 1/2 cup brown sugar
- 1/2 cup vinegar
- 1 tsp. garlic powder
- 1/4 cup worcestershire sauce
- 1/2 cup italian salad dressing
- 1 1/2 lb. boneless chicken breast
- 1 small can crushed pineapple - drained
- 3/4 cup cashew pieces
- 4 cups rice
Instructions
- Mix all "marinade" ingredients and bring to a boil. Cool and divide in half.
- Use half to marinade 1 1/2 pounds of boneless chicken breasts overnight. Refrigerate the other half.
- Prepare rice for 4 people as directed on box.
- Remove chicken from marinade and discard remaining marinade. Grill or broil chicken while rice is cooking.
- After rice is cooked, stir in crushed pineapples (drained), and about 3/4 cup of cashew pieces.
- Reheat other half of marinade(not the one that had the chicken in it).
- Serve cooked chicken over rice with hot marinade poured over the top.
