Cajun Style Pasta

List of Ingredients
- 1 tsp. butter or olive oil
- 2 cloves garlic
- 1/2 lb. boneless chicken - diced
- 2 1/2 Tbls. flour
- 2 cups milk
- 2 Tbls. sherry
- 1/4 cup grated parmesan cheese
- 1/4 tsp. cayenne pepper
- 4 plum tomatoes
- salt and pepper to taste
- 2 cups cooked linguine
Instructions
- Melt butter in a large saucepan and add garlic; cook for 1 minute.
- Add chicken and cook in butter/garlic mixture.
- Whisk flour, milk, sherry and parmesan cheese in a bowl.
- Pour into skillet and bring to a boil while stirring constantly.
- Reduce heat to medium and cook for 5 minutes, stirring occasionally until thick.
- Add cayenne and fold in tomatoes. Add salt and pepper to taste.
- Serve over hot linguine noodles.
