- 1 sack - 24 ozs - shredded potatoes for hash browns - available in the dairy aisle
- 1 large carrot
- 1 medium onion
- 2 eggs, beaten
- 2 teaspoons of salt
- 1 teaspoon baking powder
- 3 tablespoons of matzo meal or all purpose flour
Instructions
- heat 1/2 inch of oil in a large skillet over medium heat
- place potatoes in a large blowl. using a hand grater, grate the carrot and onion into the bown
- add beaten eggs into the bowl
- add salt and baking powder, then sprinkle in the meal or flour
- compbine veggies and meal with a woden spoon
- drop mixture into oil in 3 inch mounds press down gently with a spatula to form patties
- fry in batches of 4 to 6 patties 1 inch apart until golden brown
