    Grilled Rare Tuna w/Parm. Butter Sauce

    List of Ingredients




    6-8oz. Tuna Fillets
    Extra Virgin Olive Oil
    Fine Sea Salt
    Freshly Ground Black Pepper

    6 oz. Grated Dry Aged Parmesan Cheese
    4 oz. unsalted Butter
    1 oz. stock
    Fresh Chopped Parsley
    Fine Sea Salt
    Freshly Ground Black Pepper.

    Recipe



    Preheat the grill to a very high temperature.
    Season tuna with olive oil, salt and pepper. Place tuna on grill for 30 seconds, then turn 90 degrees for 30 more seconds to get nice grill marks. Flip tuna and cook for a few more seconds, leaving the fish rare in the middle. Spoon 2 Tablespoons of Parmesan Butter Sauce over the tuna. Garnish with grated Parmesan cheese.

    Puree cheese in the food processor until fine, add the butter and blend until smooth. Refrigerate. Put the butter into a saucepan with the stock and heat while stirring until melted and of a suace consistency. Adjust the consistency with more stock (thinner) or butter (thicker). Season with salt and pepper. Add Parsley when done.
